I agree that it's not his age, and ironically Mourinho was faced with a very similar dilemma at Man Utd in Feb 2016 when they had a shortage of strikers and options up front and he gave Rashford his debut, if I recall in his second game he scored 2 goals against Arsenal.
Mourinho clearly thinks he's not ready, or felt that Rashford was more ready then that Parrott is now when Rashford was 18 and a half.
He felt that Tanganga was ready for a debut against Liverpool no less so I agree that it's not down to age.
It might pay off, and who knows he could score for us tonight, or it might backfire. Parrot's last start saw us going out on penalties to Colchester earlier this season after drawing 0-0 in 90 mins.
I know it's tempting but I would tend to agree that there's a valid reason why Pitch and Mourinho would be saying they don't or didn't think he was ready. He's been on the bench recently, and it would be odd if he wasn't on the bench tonight, given what options or lack of them we currently have.
